Cheese and the Roman Empire

Culinary historians think that the creation of cheese was actually a happy accident: about 12,000 years ago, a shepherd poured the day's milk into a calf's stomach, which he used as a pouch. After a while, the milk solidified. The Shepard thought it not only tasted good, but also kept longer.

Although cheese was probably first popularized in the Middle East, it was the Roman Army which spread it across Europe. Their marching armies needed traveling food that could keep over a variety of terrain and temperatures. Cheese became their fuel. As they conquered and colonized, they actually “spread the cheese.”
