More Thoughts on Bistecca alla Fiorentina

As I said before, when you're in Florence, make sure you have at least one other person who wants to share with you – because these things are huge!  They cut the beef extremely thick and cook it quickly over burning wood coals. It’s black and crusty on the outside, scarlet in the center. It so tender, you could almost cut it with a spoon. Don’t even think about ordering it well done!

The name “bistecca” comes from the English word “beefsteak.” According to a legend, in the 1500’s during a barbeque in Piazza San Lorenzo, some English tourists started screaming “beefsteak!” This was immediately turned into the Italian “bistecca” and made their own by adding “alla fiorentina.”
