The Complexity and Regulation of Italian Goat Cheese

There are two kinds of goat cheese: soft and aged. The soft is whiter, sweeter, and can be scented with herbs and spices. The aged is firmer, pale yellow, and a little more acidic. Both have a very distinctive flavor. They’re creamier than feta, but not as salty; kind of tangy with the consistency of cream cheese.

Like wine and olive oil, Italian cheeses are safeguarded by a Denomination of Protected Origin, authorized by the EU. Consequently, Italians revel in the complexity of their cheeses the same way many people sniff at their wines.

Cheese is such a simple food. Just go to the market, buy some bread, wine, an apple or pear, and some cheese. It’s the perfect meal. Cin Cin!
