The Healthier Choice of Cinta Senese Meat

According to our gentleman farmer, Daniele Baruffaldi, the meat from these pigs is excellent for things like prosciutto and salami because of their diet, and while the meat is fattier, it is also high in Omega-3’s, making it healthier to eat. It actually melts in your mouth at a lower temperature than regular pork. Among the types of products produced from its meat are salami, sausage, pork loin, lard, salt pork, and of course, prosciutto.

You can see how important these animals have been throughout history by taking a look at paintings you can find all over Siena. For example, fresco “Good Government” by Ambrogio Lorenzetti, which dates from the 1300’s, at the Palazzo Pubblico in Siena’s Piazza del Campo. Other paintings are housed at the Pinacoteca Nazionale, in the Cappella di Casanova di Ama in Chianti, at the Biblioteca degli Intronati in Siena, and in more recent painting by Giovanni Fattori.
