Tuscan cuisine, known as "La Cucina Povera Toscana" is actually peasant food, where the ingredients are produced locally and prepared fresh. Indeed, eating in Tuscany is art, religion, and serious business.
Celebrity chef Gina Stipo introduced us to pig farmer Daniele Baruffaldi to learn about some of the delicacies of Tuscany. Located just a few miles outside of Siena in a bucolic Tuscan setting, Daniele’s farm can more accurately be described as the estate of a gentleman farmer.
Specifically, Baruffaldi specializes in the Cinta Senesa breed of pig, which has been raised for centuries in Tuscany. Their fatty meat creates the rich, flavorful prosciutto and salami we enjoy today.
