Here in the ghetto, you’ll find restaurants and bakeries handed down from generation to generation. Historically, much of the dishes here are fried, as one of the few businesses that the Jews were allowed to pursue during the war was that of “friggitore,” or vendor of fried food. No trip to the Ghetto is complete without a taste of Carciofi alla Guidia, literally “Jewish-Style Fried Artichokes.”
