The Jewish Ghetto & Fried Foods

Our local guide, Cynthia Garofalo, recently took us on a walking tour of the Jewish Ghetto. Although most of the old ghetto has been torn down, you can still find a few reminders of the Roman Jews' storied past and lively present.

Here in the ghetto, you’ll find restaurants and bakeries handed down from generation to generation. Historically, much of the dishes here are fried, as one of the few businesses that the Jews were allowed to pursue during the war was that of “friggitore,” or vendor of fried food. No trip to the Ghetto is complete without a taste of Carciofi alla Guidia, literally “Jewish-Style Fried Artichokes.”
