Bistecca alla Fiorentina doesn’t sound like much when you describe it: an olive oil basted, grilled T-bone steak, but here, as in art, perfection lies in the details. Bistecca is actually closer to a porterhouse. It comes from the prized Chianina cow, one of the oldest and largest breeds of bovine in the world. These cows have roamed the hills of central Italy since the age of the Roman Empire.
